I wanted a quick, filling, and somewhat healthy lunch and I wanted pizza. I pulled 2 frozen Udi gluten free pizza crusts from the freezer, turned the oven to 375, grabbed the pizza stone. I put the crusts on the stones and put it in the oven. Yes, I put everything in the oven before it was warm.
Once the oven, stove and crust where warm I took them out of the oven. I used left over marinara sauce from the spaghetti squash dinner as the pizza sauce – it was already spiced and flavorful.
To finish off my pizza, I added a bit of oregano, turkey pepperoni, baby spinach, cheddar cheese (because that is what we had) and parmasean cheese. To the kids pizza I added olives, a favorite.
I cooked the pizza for another 15 min to warm everything up. Cut into strips and enjoyed.
